EXECUTIVE HEAD CHEF

We are looking for a dynamic Executive Head Chef to help take The Screening Room through its next growth phase. Be part of the best hospitality team in the most beautiful region in NZ.
You will lead your kitchen team with professionalism, humour and most importantly with a fine example of what it takes to be successful in this dynamic industry.
You will treasure your team, hiring, training, optimizing productivity. You will cover shifts in team members’ absence. You will train team to implement your new recipes, cooking techniques and equipment, and oversee all food preparation. You will oversee delivery of kitchen supplies, costings, margins and stocktake of all kitchen product.
You will work with a team of 4 chefs including a Senior Sous (not yet appointed), Junior Sous, 2 x Commis Chefs, and 3-4 KP’s
You are creative, service-oriented and a level-headed team player.

Executive Chef Responsibilities:
*Ensuring promptness, freshness and quality of dishes.
*Coordinating cooks’ tasks.
*HR – Total HR for the kitchen, team moral, hiring, training, disciplining, you need to be very competant with Employment Law.
*FCP, implementing and administering. Implementing hygiene policies and examining equipment for cleanliness.
*Designing new recipes, planning menus and selecting plate presentation.
*Reviewing staffing levels to meet service, operational and financial objectives.
*Hiring and training kitchen staff, such as cooks, food preparation workers and dishwashers.
*Performing administrative tasks, taking stock of food and equipment supplies, and doing purchase orders.
*Setting and monitoring performance standards for staff.
*Arrange for equipment purchases and repairs
*Obtaining feedback on food and service quality, and handling customer problems and complaints.

Executive Head Chef Requirements:
2+ years experience in similar position.
Advanced knowledge of food profession principles and practices.
Proficient knowledge of human resources management.
Excellent knowledge of BOH systems, ordering and inventory.
Excellent communication skills.
Ability to meet deadlines.
Available to work on call, shifts, after hours, over weekends and on public holidays.
